How’s your New Year Resolution going?  Tomorrow is the 1st February, and we wanted to give you a positive helping hand during these freezing cold weeks.

After battling through snow and ice – and now biting winds too – to get to work, all I want is something warm and comforting for lunch.  Although I love a salad, I just can’t bring myself to make one in the morning before I leave for the day.   So, we asked Kurt what he would be eating from The Street Food Chef, that was going to fill him up, but also be guilt free and support a healthy and balanced diet.

He chose Chicken in a Smoky Tomato sauce as the main filling because it is high in protein and low in fat, and has substituted rice and sour cream for guacamole as avocados are filled with essential fats and are dense in micro nutrients.  Black beans bring their own magic health promoting blend of protein and carbs, and you can add coriander to enhance the taste as well as add all the wonderful healthy properties it contains.  (Look out for a post describing the health benefits of avocados in the coming weeks).
